Very little, and never your documents. Automatic calls cover license validation, an anti-tamper time check, and update checks, none of which carry document or recipient data. Only email sending transmits recipient details and content, and only through your own SMTP server.

In normal use, the only automatic network calls go to MailMergic and Google infrastructure, and none of them carry document or recipient data:

License validation sends your license key together with a device fingerprint, hostname, and operating system.
An anti-tamper time check sends the platform and app version only.
Update checks retrieve release metadata only.

The one feature that intentionally transmits recipient details and rendered content is email sending, and only if you configure a sender and choose to send. That traffic is routed through your own SMTP server, not through MailMergic.
